I’ve been to Fargo, North Dakota a handful of times. The first time while visiting North Dakota in order to hit all 50 states, and most recently to see 311 play at Fargo Brewing Company – because, why not?! While we were there with friends, we wanted a legit breakfast the day after seeing the show, and stumbled upon Randy’s University Diner.
At first glance, it’s your normal diner, serving breakfast all day, lunch and dinner, at reasonable prices. Nothing super fancy, but what makes it amazing is the cinnamon streusel coffee cake. Instead of choosing toast to come along with your breakfast, you have the optional choice of picking their freshly baked coffee cake instead. Is that even a choice?! OMG, seriously the best coffee cake ever – sorry Aunt Trudy. The food was also good, and the service was outstanding. I’d drive to Fargo again just for that coffee cake. You’re welcome.
